A timeless, cozy meal that fills the house with warmth and stretches easily to feed a crowd. This one-dish dinner is gentle on digestion, easy to assemble, and forgiving with substitutions.
🧺 Ingredients
- 2 cups cooked chicken (cubed or shredded)
- 2 cups cooked rice
- 1 can diced tomatoes (or 1 cup mild salsa)
- 1 cup mixed vegetables (fresh, frozen, or canned)
- 1 cup shredded cheddar or mozzarella
- 1 tablespoon butter
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- Salt and pepper to taste
🍲 Directions
- Preheat oven to 375°F.
- Lightly butter a 9×13-inch baking dish.
- In a large bowl, mix chicken, rice, tomatoes, vegetables, and seasonings.
